Ingredients

For the energy balls:

  • 2 cups rolled oats
  • 2 cups pitted Medjool dates
  • 3/4 cup good quality cocoa powder
  • 1/2 cup smooth peanut butter
  • 1/2 cup peacans
  • 1/2 cup desiccated coconut
  • Pinch of salt flakes
  • 2-3 tbsp maple syrup
  • 1 tbsp coconut oil
  • Zest of 1 blood orange
  • Juice of 1/2 blood orange

For the coating:

  • Desiccated coconut
  • 1 tsp coconut oil

Instructions

  • Blend the Ingredients:
    In a food processor, combine the oats, dates, cocoa powder, peanut butter, peanuts, coconut, salt, maple syrup, coconut oil, blood orange zest, and juice. Blend until a sticky dough forms. If the mixture is too dry, add a splash of water to help it come together.
  • Shape into Balls:
    Scoop out small portions of the mixture and roll them into bite-sized balls. If the mixture is too sticky, lightly dampen your hands with water to make rolling easier.
  • Coat and Chill:
    Roll the balls in desiccated coconut, cocoa powder, or chopped nuts for added texture and flavor. Place them in the fridge for at least 30 minutes to firm up before enjoying.
