Easy Creamy White Beans on Toast

Creamy, garlicky white beans are blended with parmesan and sour cream, then piled onto buttery sourdough toast for a simple yet satisfying bite.

Ingredients

For the Beans:

  • 1 can white beans, drained and rinsed
  • 1 tbsp olive oil
  • 1/2 tsp tsp garlic powder
  • 1/2 tsp onion powder
  • 1  tbsp nutritional yeast
  • 2  tbsp  sour cream
  • 2  tbsp grated parmesan
  • Salt & black pepper, to taste

For the Toast:

  • 2 thick slices sourdough
  • 1  tbsp butter

Instructions

  • Bean Magic:
    eat the olive oil in a pan over medium heat. Add the drained beans, garlic powder, onion powder, salt, and pepper. Stir and let the warm through for a couple of minutes.
  • Make It Creamy:
    Stir in the sour cream, parmesan, and nutritional yeast. Let everything mingle for another minute until it turns into a velvety,cheesy and garlicky dream. If it looks too thick, add a splash of water to loosen it up.
  • Toast Time:
    Toast your sourdough until it’s golden and crispy—because soggy bread is a crime. Slather on as much butter as your heart desires. Personally, I go to TANDSMØR  (a Danish term meaning “tooth butter”)—if you can’t see your teeth marks in the butter, you haven’t used enough!
  • Assemble & Enjoy:
    Pile the creamy beans onto your crispy sourdough, top with extra parmesan and a crack of black pepper, and devour immediately.
