  • 1 lb (450g) pork mince

  • 2/3 cup uncooked rice (long-grain, jasmine, or basmati)

  • 2 garlic cloves, grated or minced
  • 2 tbsp chipotle paste (adjust to taste)
  • 2 tbsp honey
  • 1 1/2 cups chicken stock (or water + stock cube)
  • 1 tbsp butter
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • Optional garnish: sour cream, fresh cilantro, or lime wedges

Instructions:

1 Boil the Kettle & Prep Ingredients:

Boil a half-full kettle. If using frozen sweetcorn, rinse under warm water to defrost.

2 Cook the Pork:

Heat olive oil in a large frying pan over medium-high heat. Add the pork mince and cook for 5-6 minutes, breaking it up with a spoon, until browned and cooked through. Season with salt and pepper.

3 Flavor Boost:

Stir in the garlic and cook for 1 minute until fragrant. Add the chipotle paste and honey, stirring to coat the pork in smoky sweetness.

4 Add the Rice & Sweetcorn:

Stir the rice and sweetcorn into the pan, coating them in the pork mixture. Pour in the chicken stock and bring to a gentle simmer

5 Cook the Rice:

Cover the pan with a lid, reduce heat to low, and let it simmer for 15-18 minutes, stirring occasionally, until the rice is tender and the liquid is absorbed.
